70g unsalted butter
100ml water
c.Crispy pastry: (15g / months)
200g cake flour
100g unsalted butter
d.Filling:
20 salted egg yolk
1t rice wine
600g red bean paste (30g / months)
e.Topping :
sesame seeds
1 egg yolk+1/4t milk
*Preheat the oven to 200°C (392°F) 40min
