Fragrant, healthy and easy fish curry from Myanmar! Tomatoes are cooked down into a luscious sauce with herbs like lemongrass, turmeric and ginger, and then fish is gently simmered in this flavourful liquid. It’s an easy and delicious way to start venturing into Burmese cuisine!
This recipe is inspired by a cookbook from a famous Burmese restaurant in the Bay Area called Burma Superstar. I always wanted to go there when I lived in the area, but I never got a chance to, so I was excited to try out their recipes when I saw the book released! I hope you enjoy it!

About Pai:
Pailin “Pai” Chongchitnant is the author of the Hot Thai Kitchen cookbook, co-host of a Canadian TV series One World Kitchen on Gusto TV, and creator and host of the YouTube channel Pailin’s Kitchen.
Pai was born and raised in southern Thailand where she spent much of her “playtime” in the kitchen. She traveled to Canada to study Nutritional Sciences at the University of British Columbia, and was later trained as a chef at Le Cordon Bleu culinary school in San Francisco.
After working in both Western and Thai professional kitchens, she decided that her passion really lies in educating and empowering others to cook at home via YouTube videos, her cookbook, and cooking classes. I got so happy when I saw that you were gonna do this Burmese tomatoe-fish-dish. But, it is not as the one I got in and around Mandalay, Myanmar, so I think this one is modified, or how you write it (I am Swedish). The week I was in and around Mandalay, I got a set of different dishes for every lunch, there were from 6 to 9 different dishes in front of me, for no money at all. The one I liked the most, was the tomatoe-dish with a hint of fish and some other things. But there the fish was integrated in the tomatoes so you could not see them. I miss that one… have to go back to Burma or Myanmar, and also eat their exellent tea leaf sallad, very nice!

Yeah Burmese dish! Burmese curry are definitely very oily but this looks light and healthy!
