COOKVLOG: STRAWBERRY WATERMELON CAKE RECIPE (Recreate Blackstar Pastry in Sydney)

A LONG ONE, BUT I PROMISE NOT THAT HARD TO MAKE! (EXCEPT FOR CUTTING THE WATERMELON PART)

ALMOND DACQUOISE:
150g almond meal
150g icing sugar
5 egg whites (180g)
150g sugar

ROSE-SCENTED CREAM:
500ml cream
15g powdered gelatine
25ml water
1 tbs rosewater

WATERMELON:
~1kg watermelon
2 tbs rosewater
2 tbs white sugar

STRAWBERRY JELLY:
250g strawberry
150ml water
3g gelatine powder
1 tbs sugar

GARNISH:
20g pistachios, chopped
dried rose
