Guyana Christmas Black Cake, step by step Video Recipe (HD)

How to make Christmas Black Cake.

Ingredients.

1 cup all purpose flour
1 cup butter
1 cup brown sugar
1/4 cup finely chopped peanuts
4 eggs
1 tsp. essence ( vanilla or almond)
142 ml browning caramel (approx 1/2 cup)

FRUITS

1 1/2 cups of blended fruits ( dried seedless prunes and raisins)
you can also add dried citrus peels and maraschino cherries.
These fruits has to be soaked in rum for at least a week up to 1 year
If you prefer not to use alcohol, you can use a fruit juice like cherry juice or apple cider to soak the fruits in. Cake without the alcohol will last only a few days as the alcohol preserved the cake which can be kept outside the fridge for weeks.
So the cake without the alcohol can be made closer to time of intended use, whereas the rum cake can be made weeks ahead and last weeks after.

    No baking powder or baking soda?

      Bibi, this cake does not require baking powder because it is supposed to be solid, if you use baking powder it will not be . Some people do use bp though.
