Hi everyone! I’m happy to share with you all another one of my low fat raw vegan recipes. This one is a flavor packed rainbow beet salad! Oh my heavens is it so delicious! It’s so fun to munch & crunch away on the nutritional rainbow! Recipe down below. Enjoy the fun video! 🙂
Ingredients:
Salad Bed is the stem and leaf tops from 2 large beets, carrots, celery, multicolored sweet mini peppers, cauliflower, cucumbers, cherry tomatoes, and spinach (you use whatever your little heart desires though). 🙂
Dressing:
2/3 cups water
3 medjool dates
3 large lemon wedges
garlic, ginger, leek onion, oregano to taste
*Blend your dressing and pour over your salad bed & enjoy all that raw nutrition your body craves! 🙂

miss Staci you don’t use fat such as omega 3 in your salades ???? Hempseeds ??? Can we combine dates with fat for a good digestion ???
Hi Josiane. I usually don’t like to include fats in my dinner salads and veggie dishes. Once in a while I’ll make a hemp seed dressing to dish veggies in, but that’s actually on rare occasions. I know that it’s best to add these fats that you mentioned to our salads for better absorption of nutrients from the greens, but I find the fats take away the flavors in my salads. I get so focused on trying to taste the flavor of the fats that I miss out on the savory flavors of my salad. For me, if I’m going to eat my fats I want to really taste and enjoy the fats and I like to eat them in a sweet/cream/dessert-like way. I tend to always get my fats from either durian, avocado, nuts & dates, or shakes. I find that eating dates with fats digests just fine. I do it all the time. For me, I have no problem digesting those combos. Some people seem to have difficulties with it, but you most certainly can do it if you have no problem with it. I know it’s always best to eat your fats with your salads, but I just can’t do that. I’ve gotta really enjoy my fats in a different way. Hope that helps some Josiane. 🙂
