One cake to rule them all!
Lots of people have asked me for a carrot cake recipe and it’s finally here!
Look no further, this carrot cake is delicious, moist and easy to make!
The most prep comes from preparing the carrots and the apples, oh yeah lets talk about the apples here for a second, this is the secret ingredient, it adds such moisture to the cake without taking any of the carrot flavour away
This cake + cream cheese frosting is just a classic and the recipe belongs in your cook book
Carrot cake has the great quality that it raises up pretty evenly so it makes for great cake layers (less waste!)
I actually made this into a layer cake for a friend’s birthday and that is what you see in the video, and actually I hope to make a more in depth video on how to tackle cake layering
• 1 cup (200g) packed dark brown sugar
• 1 cup (200g) granulated sugar
4 large eggs
• 1 cup (240ml) vegetable or canola oil
• 1 teaspoon vanilla extract
• 2 1/2 cups (312g) all-purpose flour
• 2 teaspoons baking powder
• 1 teaspoon baking soda
• 1/2 teaspoon salt
• 1 teaspoon ground cinnamon
• 1/2 teaspoon all spice
• 2 cups (260g) grated carrots (about 4 large)
• 3/4 cup (133g)grated apples (about 1 apple, I used braeburn)
• 1 1/2 Tbsp of desiccated coconut
Makes three 6″ round cake pans, about 2 cups of batter each
Bake in a 180C (350F) for about 25-35 min
