Raw Vegan Winter Dinner Recipes! Enjoy these hearty, satisfying flavorful dishes. RECIPES & MUSIC BELOW:

RAW VEGAN MAC N’ CHEESE
Ingredients:
3 tbsp sweet onion, chopped
1/2 tsp smoked paprika
Sauce-
1/4 c cashews
2 tbsp wakame seaweed (dry)
1 tbsp lemon juice
1 clove garlic
3 tbsp nutritional yeast
1 1/2 c yellow bell pepper, chopped
1 tsp smoked paprika
1/4 tsp crushed red pepper flakes
Macaroni-
1 1/2 to 2 zucchinis
Toppings-
cherry tomatoes, halved
fresh parsley
black pepper

Process:
1. Add sweet onion to bowl and stir in 1/2 tsp smoked paprika. Set aside.
2. Add all sauce ingredients to blender and blend thoroughly.
3. Peel and spiralize the zucchinis and chop into macaroni sized shapes. Measure out 2 1/2 cups of zucchini shreds and add to a bowl.
3. Add the onion/paprika mixture and the sauce to the zucchini noodles and mix until thoroughly coated.
4. Add mixture to a clean bowl and top with cherry tomatoes, parsley, and black pepper.

KALE SALAD W/ GARLIC TAHINI DRESSING
Ingredients:
Dressing-
2 tbsp tahini
1 tbsp lemon juice
1/2 tbsp maple syrup
1 garlic clove, minced
1 small slice of jalapeño (with a few seeds if you want it spicy)
1/4 tsp smoked paprika
1/8 tsp chipotle powder
(extra lemon juice/water to reach desired consistency)
1/2 tbsp green onion, chopped
Salad-
2 c kale
1/2 c gourmet tomatoes
1/2 yellow bell pepper, chopped
1/3 c dulse, rinsed and chopped
Toppings-
sliced almonds
Process:
1. Add all dressing ingredients except the green onion to a large bowl. Mix thoroughly and add lemon juice and/or water until desired consistency is reached. Mix in green onion.
2. Add all salad ingredients to the bowl and massage the dressing into the kale. Let the salad sit for approx 15 mins to soften.
3. Add salad to a clean bowl and top with slice almonds.

RAW VEGAN CHILI:
Chili-
2 c sun-dried tomatoes (no salt, sulfur or citric acid added)
3 medjool dates, pitted
2 tbsp soaking liquid
1 1/2 plum tomatoes
1/3 (or 1 large chunk) of jalapeño (with a few seeds if you want it spicy)
1 clove garlic
1 1/2 limes, juiced
1 tsp chili powder
1 tsp oregano
1/8 tsp cumin
1/4 tsp chipotle
small handful of basil, chopped
1/4 c raw corn
3 tbsp sweet onion, chopped
2 tbsp green onion, chopped
Toppings-
walnuts, chopped
nutritional yeast
cherry tomatoes, halved
avocado, chopped
cilantro
Process:
1. Add sun-dried tomatoes and medjool dates to a large bowl with 5 c water. Let soak for 30 mins.
2. Remove sun-dried tomatoes and dates from water and add to food processor. Add 2 tbsp soaking liquid, plum tomatoes, jalapeño, garlic, and lime juice to food processor and pulse/blend.
3. Add chili powder, oregano, cumin, chipotle powder, and basil to food processor and pulse/blend a few more times.
4. Add mixture to bowl and stir in corn, sweet onion, and green onion.
5. Add to a clean bowl, and top with walnuts, nutritional yeast, cherry tomatoes, avocado, and cilantro.

    Smoked paprika and Wakame – not sure if I have them in my local grocery
    stores here in northern Vermont. Your recipes look and sound delicious. I
    hope I can find those ingredients!

      Thanks! If you can’t find those ingredients, the chili recipe doesn’t have
      either of those, so you should be able to find the ingredients for that 🙂
