This custard tarts recipe uses a standard shortcrust pastry recipe and a simple custard recipe. It is simple to make at home and uses a few ingredients that you may already have in your cupboards.
Ingredients:
100g plain flour
50g butter
2tbsp sugar
1/4tsp vanilla essence
200ml milk
1tsp cornflour
2 egg yolks
Method:
1. Sift the flour into a mixing bowl and rub the butter into it until the mixture resembles breadcrumbs
2. Add water, gradually, until you have formed a dough (rest the dough in the fridge for at least 15 mins)
3. Roll the dough out on a floured work surface and use a pastry cutter to make pastry rounds (make sure the cutter is bigger than the muffin tin wells)
4. Line a cupcake tray with the rounds
5. Make the custard, by whisking the 2 egg whites with the caster sugar, vanilla essence and cornflour.
6. Heat the milk (don’t let it boil)
7. Pour the heated milk into the egg mixture gradually, whisking continuously until well combined
8. Transfer the mixture into a clean saucepan and heat gently, whisking continuously, until the custard has thickened
9. Pour the custard into the pastry cases and bake the custard tarts in a preheated oven at 190 degrees for 15-20 minutes
