Danish Pastries How to make Home Recipe
This is how I make them in my Bakery
Makes: 12 Danish Pasties
Recipe Ingredients :
Making the Bun Dough
18 oz flour
8 fl oz lukewarm milk
2 oz caster sugar
2 oz butter / white shortening chopped into pieces
2 fl oz egg beaten
2 oz fresh yeast
½ tsp salt
½ tsp vitamin C ( if cold, or no time ) Please Note some Flour Contain Vitamin C
For the Danish Pastry 8 oz Butter / White shortening
For the glaze
4 oz Apricot Jam
2 oz hot water
For a machine with 3 speed

Recipe Instructions
1. Add the yeast to the milk and stir. Leave it to stand for 10 minutes to allow the yeast to activate.
2. Put the flour in to the mixing bowl, add in Salt, Sugar, Vitamin C, and warmed Shortening / Butter and mix well on 1st speed.
3. Make a well in the centre of the mixture. Add in the beaten egg, milk and yeast
4. Mix on 1st speed for around 9 mins and then 1 min on 2nd speed
5. Place the dough in a bowl and cover for 5 mins
6. Mould up the dough on work top rest for 10 mins
7. Roll the dough into a rectangle 1 cm thick, keeping the edges and corners straight
8. Use a rolling pin to beat (8 oz) of cold butter to make it pliable, shaping it into a rectangle that is half the size of the dough
9. Place the butter on 2/3 of the dough and fold the remaining dough over.
10. Seal the edges using the rolling pin. and roll into a rectangle 1 cm rest 5 mins
11. Brush away any raw flour fold the dough rest 5 mins,
12. and roll into a rectangle 1 cm fold rest 5 mins
13. Make a three-fold: for a total of two three-folds rest 5 mins.
14. Now you can roll out to about 4 mm thick
15. Cut 4 or 5 in Squares
16. Water or egg the Middle of the squares and fold in
17. Tray up and prove for about 60 mins
18. Once proved push the centres down and fill with what you like
19. Bake at 375 f for around 10 mins
20. When baked wash with hot apricot jam
21. When cooled cover with white icings
