HEALTHY BIRTHDAY CAKE RECIPE:
½ cup coconut oil, room temperature
1 cup oat flour
1 cup almond flour
1 1/2 tsp baking powder
¼ tsp kosher salt
½ cup honey
2 large eggs
1 tsp vanilla extract
1-2 tbsp sprinkles

1. Mix together coconut oil, oat flour, almond flour, baking powder in stand mixer with paddle attachment until mixture resembles bread crumbs. Add honey, eggs, vanilla until mixture is smooth. Add sprinkles and mix 1-2 times until dispersed.

2 .Line 8″ spingform pan and spray with coconut oil spray, then dust with oat flour on the bottom and edges. Shake off excess.

3. Bake at 350℉ for 35-45 minutes until cake tester comes out clean. Let cool 5 minutes before cutting.
