Kitchenaid Artisan Mixer Recipes | How to Make Carrot Cake at Home

In this episode of “Piatto,” we demonstrate how to make a carrot cake at home (from scratch!) using a KitchenAid Mixer — specifically, the KitchenAid Artisan stand mixer. Of course, you can use this cake recipe with any brand of stand mixer.

Of all the dessert KitchenAid Artisan mixer recipes you can make, this moist carrot cake with cream cheese frosting is sure to please. Here we use the Kitchenaid Artisan mixer to make both the carrot cake sponge and the cream cheese frosting with whipped cream. This layered carrot cake is moist and not-too-sweet. This whipped cream frosting for cake is subtle in its sweetness, bringing to mind European style frostings.

TIP: Make sure your carrot cake batter is even in the jelly roll pan before baking. Uneven batter means uneven cake layers!

TIP: Use the whipped cream frosting to ‘level out’ the cake layers that may not be perfectly even.

INGREDIENTS for Moist Carrot Cake with Cream Cheese Frosting

CAKE SPONGE
All-Purpose Flour – 6 3/4 oz. (1-1/2 cups)
Ground Cinnamon – 1 teaspoon
Ground Ginger – 1/2 teaspoon
Ground Nutmeg – 1/4 teaspoon
Baking Powder – 1 teaspoon
Fine Salt – 3/4 teaspoon
Baking Soda – 1/2 teaspoon
Sugar (Cane or White) – 1 1/2 cups
Olive Oil – 3/4 cup
Eggs – 3 large
Carrots – 2 cups, coarsely grated
Vanilla Extract – 1 teaspoon

CREAM CHEESE FROSTING
Cream Cheese – 18 oz, chilled (Philly cream cheese or Philadelphia cream cheese fine; full fat or reduced fat)
Heavy Whipping Cream – 1 1/2 cups, chilled)
Vanilla Extract – 1 1/2 teaspoon
Sugar (Cane or White) – 1/4 cup + 2 teaspoons

TOPPING
Caramelized Nuts – pecans or walnuts, coarsely chopped or whole
