Ovaltine Cake | Malt Chocolate Cake | Chocolate Cake

One of my fondest childhood memory is sipping on a cup of warm Ovaltine milk that my mother had prepared on a cold winter night. Ovaltine is a malt chocolate drink mix that you mix with milk or water and it was usually a bedtime routine to have a warm cup of milk with a scoop of ovaltine in our house. Just thinking about it now makes me feel all warm and cozy. And later on in life, I was introduced to a cake version of this drink, and it was probably one of the best cakes I have eaten in my life. We had to recreate this cake at home, and with a few ingredients from your pantry and off course the Ovaltine drink mix you too can enjoy this delicious moist malt chocolate flavored cake. This recipe is extra special as we used melted chocolate and coffee to give it a rich taste and dense texture, but what’s amazing is the moistness and softness of the cake. My husband loves having a thick slice of this cake for breakfast and a cup of coffee but it can be enjoyed anytime of the day. Next time you have a craving for something sweet, then try this fantastic recipe, you will not regret!
Ingredients:
• 1 cup flour
• ½ cup ovaltine powder
• 1 tsp baking powder
• ¼ tsp salt
• 1 cup sugar
• ½ cup oil (Canola)
• 3 tbsp. melted butter
• 1 tbsp. instant coffee
• ¼ milk
• 1 tbsp. melted chocolate or 1 tbsp cocoa powder
• 2 jumbo eggs ( or 3 medium size)
• 1 tsp vanilla
• Cooking spray
Instructions:
1. In a mixing bowl, place a strainer on top and add dry ingredients, flour, ovaltine, baking powder, and salt.
2. Mix all the ingredients and shake for all the dry ingredients to fall through leaving behind any large pieces to discard.
3. In another bowl, mix together warm milk and instant coffee and set it aside.
4. Next add ingredients to make the wet batter, sugar, oil, butter, eggs, melted chocolate, milk and coffee mixture, and vanilla.
5. Use the hand blender to mix all the ingredients, until well combined.
6. Add the dry ingredients in batches to the wet batter, try not to over beat the batter.
7. Once all the ingredients have been well combined, pour it in a loaf pan that has been well sprayed on all sides.
8. Preheat oven at 350 degrees Fahrenheit, and bake for 45-50 minutes, each oven is different so just keep an eye on it after 40 minutes.
9. Once fully cooked inside and out of the oven, enjoy a warm slice with a cup of milk or coffee!
