DAD’S PUFF PASTRY APPETIZERS

TOM, BASIL, MOZZARELLA
(Makes 6)

INGREDIENTS:
1 package of Pepperidge Farm puff pastry sheets
1 egg, beaten
(4) Roma Tomatoes, sliced
Drizzle olive oil
Salt and pepper
1 tbsp (15 ml) Fresh basil

2/3 cup (160ml) Grated Mozzarella Cheese
Freshly Shaved Parmesan Cheese
Fresh Basil for garnish

METHOD:
Preheat oven to 400F (200C).

Place tomatoes olive oil, salt and pepper and basil in a shallow baking dish, season with salt, pepper and fresh basil. Roast for 20 minutes. Allow to cool and set aside.

Cut 1 sheet of Pastry in to 6 rectangles. Cut second sheet of pastry into 6 rectangles and then each rectangle into 4 long strips. Cut 2 of the strips in half. These strips will create your borders.

Brush egg wash along the perimeter of each whole rectangle. Place strips on top creating a border. Transfer assembled pastries to a baking sheet lined with parchment paper.

Bake at 400F (200C) for 18-20 minutes until puff pastry is puffed up and golden brown.

Fill each rectangle with a layer of cheese, roasted tomatoes, and top with parmesan and more mozzarella if desired. Bake at 400F (200C) until cheese melts. Garnish with fresh basil.

MUSHROOM + ITALIAN CHEESE BLEND FILLING
(Makes 6)

INGREDIENTS:
1 package of Pepperidge Farm Puff Pastry Sheets
1 tbsp (15g) butter
2 cups (480ml) sliced mushrooms
Salt and pepper
A few dashes of Worcestershire
1 tsp (5 ml) fresh thyme, chopped
1 cup (240ml) Italian Blend Cheese
Fresh thyme sprigs for garnish

METHOD:
Sautee mushrooms in butter until reduced, season with salt and pepper add Worcestershire sauce and fresh thyme.

Follow instructions for puff pastry baking and filling above.

HAM & CHEESE FILLING
(Makes 6)

1 package of Pepperidge Farm puff pastry sheets
6 slices of ham
1 tbsp (15g) of butter
¼ cup (60 ml) Dijon mustard
1 cup (240ml) Gruyere cheese
Fresh Chives for Garnish

METHOD:
Sautee ham in butter until crispy. Allow to cool set aside.

Follow instructions for puff pastry baking and filling above.
