Texas Tornado Cake – Good Recipe For Those Who Work

This is a rich and very moist cake and can be made in one bowl without even using a mixer.

I used a can of Fruit Cocktail in heavy syrup, I would suggest using the Fruit cocktail packed in fruit juice instead.

Texas Tornado Cake

1 1/2 cups Sugar
2 Eggs
2 cups Fruit Cocktail, including liquid
2 teaspoons Baking Soda
2 cups All Purpose Flour
1/4 cup Brown Sugar
1 cup Chopped Nuts

Mix and cream together the first 5 ingredients.
Pour batter into a lightly greased and floured 13X9
Cake pan. Then mix the brown sugar and nuts together and sprinkle onto the top of the batter.

Bake in preheated 325 degree oven
approximately 40 minutes.

Spread Icing on cake while it’s hot.

Icing

1 stick Butter
3/4 cup Sugar
1/2 cup Evaporated Milk
1 cup Angle Flake Coconut

Boil the butter, sugar, and milk for two minutes ( it will raise up in the pan) add the Coconut.
Spoon over the cake as soon as it comes out of the oven.

Cool before serving.
Freezes well.
