Vegan Molten Lava Cake Recipe | Single Serving Dessert Sunday | Summer Storm

EEEEEEEEE! This is so freaking delicious! The PERFECT chocolate guilty pleasure dessert. Remember, you can always double, triple, etc. the recipe, to make more than just one!

CHOCOLATE CAKE RECIPE
DRY INGREDIENTS:
-1/4 c all purpose flour
-1/4 c organic powdered sugar
-2 tbsp cocoa powder
-1/4 tsp baking powder
-1/8 tsp baking soda
-1/8 tsp kosher salt
-1/8 tsp kala namak (black salt) *This is optional and not necessary, but nice.
WET INGREDIENTS:
-2 tbsp vegan butter, melted
-6 tbsp plain, unsweetened almond milk
-1/2 tsp vanilla extract
-1/2 tsp almond extract
-2 tbsp vegan semi-sweet chocolate chunks
DIRECTIONS:
-Preheat oven to 350 degrees fahrenheit.
-Sift all of the dry ingredients into a small mixing bowl and stir to combine.
-Add the melted butter and stir to combine, using a rubber spatula.
-In a small bowl combine the milk, vanilla extract, and almond extract.
-Add a little bit of the milk mixture at a time to the dry/butter mixture, stirring until it is nice and smooth. Once all of the milk mixture is added, the batter should be pretty funny and very smooth.
-Butter the inside of a souffle dish and then coat the inside with cocoa powder.
-Pour the cake batter into the dish, place on a baking sheet, and bake for 24 minutes.
-Allow to cool for 5 minutes.
-Gently take a butter knife and run it along the outer edges out the cake.
-Place a small plate on top of the dish, flip it over, and then carefully remove the dish off of the plate.
*ENJOY! Eat with a lottttt of ice cream, and the cherry compote of course, and top it all off with a dust of powdered sugar!

CHERRY COMPOTE RECIPE
INGREDIENTS:
-1/2 c fresh sweet cherries, stems and pits removed
-2 tsp vegan butter
-2 tsp organic cane sugar
-1/2 tsp corn starch
-3/4 tsp almond extract
-2 tsp water
DIRECTIONS:
-In a small sauce pan, over medium-high heat, combine all of the ingredients and mix well.
-Bring to a boil and then immediately turn the heat down to low and cook for 3-4 minutes.
-Serve warm, or cold!
