Vegan Peppermint Cake

Cake Ingredients:
– 1 ¼ c almond milk
– 1 tbsp lemon juice
– 2 cups flour
– 2 tsp baking powder
– pinch of salt
– ½ cup vegan butter
– ¾ sugar
– 2 vegan egg substitutes (I used )
– 1 tsp vanilla
– 2 tsp peppermint extract

Vanilla Frosting Ingredients:
– 2 tbsp vegan butter
– 2 cups powdered sugar
– 1 tsp vanilla
– 3 tbsp almond milk

Peppermint Frosting Ingredients:
– ½ tbsp vegan butter
– ½ cup powdered sugar
– 1 tsp peppermint extract
– 1 tbsp almond milk
– drop of red food coloring (optional)

Instructions:
1. Mix together the almond milk and lemon juice. Set aside for 15 minutes (to curdle).
2. Whisk together the flour, baking powder, and salt. Set aside.
3. Cream together the vegan butter and sugar.
4. Mix in the egg substitutes and extracts.
5. Alternate adding in dry, wet, dry, wet, dry to the butter mixture.
6. Pour into 2 greased and floured 9” baking pans. Bake at 350 degrees F for 20-25 minutes.
7. Mix together the frosting ingredients (each frosting in a separate bowl).
8. Decorate cake once it has cooled completely and enjoy!
